- LACTAPROQ is a food-grade lactase produced by fermentation of a strain of a strain of Bifidobacterium bifidum.

- The lactose is a disaccharide that is found in the milk of mammals; the lactose is not a sweet sugar and is poorly soluble. Lactase (B-D-galactosidase) hydrolyzes the lactose and decomposes it into the glucose and galactose, sugars that are relatively sweet (80% sweetness compared with saccharose) and 3-4 times more soluble than the lactose alone.
