Lipase is an enzyme used in the manufacturing process of cheese to enhance its flavour.

PROQUIGA BIOTECH sells different types of lipases, each one possessing its own characteristic flavour with reference to its origin:

  - Kid goat lipase: LIPAPROQ K

   LIPAPROQ K is an enzyme extracted exclusively from selected kid goat´s epiglottis.  

  - Lamb lipase: LIPAPROQ L
   
   LIPAPROQ L is an enzyme extracted exclusively from selected lamb’s epiglottis.
