LACTAPROQ is a food-grade lactase produced by fermentation of a strain of Kluyveromyces lactis.

LACTAPROQ ensures the controlled elimination of lactose which is degraded into a mixture of glucose and galactose, which makes it easy to digest without intolerance risk.

The lactose is a disaccharide that is found in the milk of mammals; the lactose is not a sweet sugar and is poorly soluble. Lactase (B-D-galactosidase) hydrolyzes the lactose and decomposes it into the glucose and galactose, sugars that are relatively sweet (80% sweetness compared with saccharose) and 3-4 times more soluble than the lactose alone.

LACTAPROQ allows the production of milk and dairy products low in lactose that can be digested by any person without having any lactose intolerance effects. The high purity of this enzyme generates dairy products low in lactose without the unpleasant flavours.

LACTAPROQ complies with the recommended purity specifications for food-grade enzymes given by the Joint FAO/WHO Expert Commitee on Food Additives (JECFA) and the Food Chemical Codex (FCC). 

LACTAPROQ  counts with the KOSHER and HALAL certificates and its manufacturing with the standards ISO 9001:2008 and ISO 22.000.
